Coconut Lime Ice
Cream

  • 1 15 oz. can of coconut milk
  • 2 avocados, peeled and pitted
  • 1 cup honey (use maple syrup for vegan)
  • Scant 1/2 cup lime juice, freshly squeezed (5 limes)
  • 1/4 cup water
  • 1/2 cup raw cocoa nibs or shredded coconut (optional)

1. Place all ingredients except cocoa nibs and/or shredded coconut into a blender or food processor and blend until smooth.
2. Pour mixture into an ice cream maker, add cocoa nibs or shredded coconut and freeze according to your machine's instructions.
